Cette \u00ab\u00eele\u00bb priv\u00e9e appartient depuis des g\u00e9n\u00e9rations \u00e0 la famille des McIlhennys, qui, en plus de fabriquer la c\u00e9l\u00e8bre sauce TABASCO\u00ae, dirige \u00e9galement une exploitation de semences. Cette pur\u00e9e est ensuite vers\u00e9e dans des f\u00fbts en ch\u00eane. La partie sup\u00e9rieure du f\u00fbt est recouverte de sel afin de former une barri\u00e8re protectrice naturelle et de permettre le processus de fermentation. Cette pur\u00e9e, qui est d\u2019ailleurs dix fois plus piment\u00e9e que le produit final, arrive \u00e0 maturit\u00e9 dans ces f\u00fbts dans un entrep\u00f4t, pendant une p\u00e9riode allant jusqu\u2019\u00e0 trois ans.
